Solona mieszanka warzywna

Ingredients:

1,5 kg marchwi,
1 kg pietruszki,
50 dag selera,
30 dag porów,
30 dag cebuli,
10 dag liści selera,
10 dag natki pietruszki,
10 dag kapusty włoskiej,
50 dag soli.

Prepare instructions:

Marchew, pietruszkę i seler po obraniu zetrzeć na grubej tarce, resztę warzyw posiekać, wymieszać, dodać sól i pozostawić na 12 - 24 godzin.
Ubić mocno w słoiczkach typu twist, by wyciekł nadmiar solanki.
Zamknąć,.
Przechowywać w chłodnym miejscu.
Używać do przyrządzania zup i wywarów.

Solenie to jedna z najstarszych metod utrwalania warzyw. Polega ona na obfitym przesypywaniu ich solą kuchenną.
Do solenia nadają się rozdrobnione warzywa, nać selera, pietruszki, koperek i grzyby.

Sól kuchenna działa bakteriostatycznie na produkty, i właśnie dzięki temu uzyskujemy przetwory wyjątkowo trwałe.
Możemy je przechowywać do 2 lat.

Mam pilne pytanie (jutro chce sie zabrac za te solone warzywa!!!): czy sok, ktory wycieknie przy ubijaniu w sloikach nalezy odlac? Ubic warzywa maksymalnie, zeby nie bylo niemalze ani kropli soku? Prosze o rade!!!!

Witam, solone warzywa ubijamy tak, by nadmiar soku odcisnąć, to znaczy tak, by były warzywa ubite, ale nie na suchy wiór, po prostu, aby soku była minimalna ilośc.. tak jak robimy kapustę kwaszoną pasteryzowaną... ubijamy ją, a jednak sok pozostaje.
